Although the health benefits of long chain omega-3 polyunsaturated fatty acid docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA) are known, the omega-3 status of populations is low. The inclusion of EPA and DHA to food products has been limited because of their low oxidative stability. This project investigates the “omics of oxidation” of EPA and DHA and develops new solutions for more stable, safe and acceptable EPA and DHA. The core of the project are the novel stability studies of synthetic enantiospecific triacylglycerol and phospholipid molecules of EPA and DHA. The oxidative stability of the enantiospecific molecules is tested in key food processes that generate oxidative lipid species, in combinations of chiral antioxidants, protective microencapsulation and in food matrixes including also sensory aspects. Oxidation during digestion is studied in vitro. These studies will form basis for new research innovations in the field of food production and health.
